Easy Homemade Mayonnaise

This is our favorite recipe for homemade mayonnaise! Why do we make our own? Because why not! Simple ingredients and farm fresh eggs make this easy and delicious. Don't be intimidated, you can do it!



Ingredients

  • 2 large egg at room temperature

  • 2 tablespoon Dijon mustard (I get mine from Azure Standard)

  • 2 tablespoon red wine vinegar (I’ve used apple cider vinegar too)

  • 1/2 teaspoon kosher salt, or more to taste

  • 2 cups oil (we use avocado oil also from Azure)


How I make it!


I use an immersion blender, if you have a food processor that would work too! (I have yet to get one of those)

  1. First I add the egg to a bowl or measuring cup, I blend for 20ish seconds and then add the rest of the ingredients.

  2. I mix with the blender until incorporated then I slowly add in the oil.

  3. First just a little bit- like a drizzle, then once it starts getting thick I add in more at a time.

  4. Add salt or lemon to taste, or don't! I often don't add anything else!

The biggest mistake I made in the beginning of making mayonnaise was I added the oil too quickly. This resulted in a mayonnaise that is not thick and the oil separates from in the fridge.
